While Hawaiian kanpachi is commonly referred to as amberjack, it is different from its wild counterpart. This farmed fish has a higher fat content, non-detectable levels of mercury, and is free from parasites that would typically infect the fish when wild.


Similar to the popular hamachi/hiramasa (or yellowtail), kanpachi is typically served sashimi-style for its high fat content. With a subtle, pure flavor when cooked, kanpachi is also lovely in a variety of culinary styles: seared, sautéed, steamed, broiled or baked, spiced, sauced or dipped.


Available as 2 Fillets –  approximately 2-3 lbs. Fresh.
